Almost Homemade Sausage Cheese Biscuits

My boyfriend likes to eat these sausge rolls from a local bakery and/or sausage cheese biscuits from McDonald’s. Only problem is they cost a lot of money in the long run so I thought of a way to make portable breakfast pockets at home!

Ingredients:

1 roll 10ct biscuits (I used Best Choice Texas Style)

shredded cheese

scrambled eggs (optional)

Line a cookie sheet with parchment paper and press the biscuits down flat.

The I topped half of the dough with a mixture of sausage, cheese, and/or eggs.

Once you’ve filled them enough top with the other dough circles and seal them up.

First I rolled the edges of the bottom dough up and over onto the top layer.

Use fork to crimp all around the rolled edges making sure they are sealed up tight. Pierce the tops of the rolls (to vent steam if needed) and then spread with butter and top with salt.

I then baked them according to the biscuit package.

Alterations/Tips

#1 I made these a few weeks back and when they came out the biscuits puffed up quite a bit more then I expected since I had pressed them flat.

Since they puffed up then the ratio of bread to filling was off and there was barely any filling. So next time I make these I will use a rolling pin and roll the dough out until it’s 1/8 inch thick, or as thin as I can get them without breaking the dough.

#2 I also plan on using cooked sausage patties instead of crumbled sausage since it will fill it up easier. My boyfriend likes those pre-made banquet sausage patties so I will use those.

#3 You can use any filling you want like ham, eggs, cheese, hash browns, bacon…the possibilities are endless!

My boyfriend said these were good and I plan on making them for his breakfast so he can eat on the go and save us money in the long run!

Almost Homemade Roast Beef Sandwiches

My sister once brought up almost homemade when I was using a frozen meal and jazzing it up to serve at a family reunion. One night I was wanting some hot roast beef sandwiches like these: Hot Roast Beef Sandwiches. However I didn’t have any roast cooking in the crock pot but then I came up with an idea.

Ingredients

1 package Oscar Mayer sliced roast beef lunch meat

1 package fresh mushrooms

1 sliced onion, I used about half an onion

1 package onion soup mix

Fix the envelope of onion soup mix as directed then add half of that to a skillet then add the roast beef.

This allows the roast beef to heat up without drying it out and it gives it some flavor. While the beef heats up place the sliced mushrooms in a skillet with butter and place the onions in another skillet with butter.

Once the onions were perfectly caramelized and the mushrooms sauteed I mixed them together.

I used the skillet that held the onions and heated it back up adding a bit more butter. I the laid the sliced rolls face down and slightly toasted them once at a time till all were crispy and hot.

After that it was simply a matter of arranging the sandwiches with juicy layers of meat, onions and mushrooms, and cheese on top of those crispy rolls. I split the remaining onion soup mix into small bowls to use as a dip.

I call this almost homemade since I bought the meat instead of cooking my own. They turned out delicious, not as good as with homemade roast beef, but still tasty and they satisfied my cravings! These cooked in less then thirty minutes

Tips:

#1 you can add anything you want to those sandwiches like sauteed green bell peppers or anything else your mind can come up with.

#2 You can use any lunch meat you want from ham to turkey to chicken breast…the possibilities are endless! I may try ham with sharp cheddar cheese next time I bet it will be just as delicious!

I also like this because it lets me use up the odds and ends in the fridge. All I had to buy was the bread since I had gotten the meat on sale and the mushrooms and onions were starting to get old….I love using up things on hand instead of tossing money in the trash by wasting food.

Homemade Hamburger Helper

Oh how I missed blogging! I have had multiple health issues in the past month which have left me feeling drained and listless after work. But I have several recipes in the hold waiting for posts!

My boyfriend loves meat, potatoes, white bread, miracle whip, processed cheese…well any process foods! We differ in our eating since I have dietary restrictions (limited red meat, no caffeine, limited sodas, no artificial sweeteners, limited processed foods…etc.) so I started looking up easy meals we could both eat. I was pleased to find a recipe for homemade hamburger helper of the cheeseburger variety that was sure to please us both!

Ingredients:
1lb lean ground beef (I used 97/3 since I have to have limited fatty red meats)
1 tablespoon cornstarch
2 teaspoons paprika
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon sugar
1/4 teaspoon pepper
1 cup hot water
2 cups skim milk
1-1/2 cups elbow macaroni (or other small pasta)
1 cup shredded sharp cheddar cheese

I started by cooking the hamburger and as it was cooking I mixed up the seasonings and corn starch in a small bowl and set it aside; while this was all going on I also boiled the hot water. Once the meat was cooked I rinsed it off in hot water to get rid of any leftover fat. Then I placed the meat back into the pot and added the seasonings, water, corn starch, hot water, skim  milk, and pasta then bring to a boil.

Once the pasta is to the desired cooked amount turn off the heat and mix in the shredded cheese. Let stand 5 minutes (or more) to thicken the sauce before serving.

This was just as quick and easy as making the disgusting boxed mix but way more healthy! There were no weird ingredients or preservatives and bonus my boyfriend (and daughter) loved it just as much, if not more, then the boxed stuff!

Tips

#1 I added 2 cups cheese because after one cup I tasted it and wanted a cheesier flavor but then again I love cheese lol.

#2 You can substitute ground turkey, chicken, or pork in place of the beef depending on your preferences.

Homemade Chicken Noodle Soup

I have said it before and I will say it again….I hate wasting things and will reuse anything if it is possible. So once again I had a rotisserie chicken for dinner (this was made awhile back) and I saved the leftovers for soup!

Ingredients

Chicken still on the bone (could be leftover chicken or bone in split chicken breast or a whole chicken)

1 bag frozen egg noodles

1 bag frozen peas and carrots

1 bay leaf

salt and pepper

First I boiled the chicken all day until I had the meat slipping off the bones and a flavorful stock.

I then carefully poured the stock back into the pan and put it on to boil while I de-boned the chicken; putting aside the meat and tossing the bones.

Once the stock was boiling I added the frozen egg noodles and the bay leaf along with seasoning it to taste.

Once the egg noodles were partly done I added the frozen peas and carrots to the broth and let it simmer. Finally I added the chicken and let it simmer a bit longer to heat up the chicken pieces.

Once the soup was done I turned off the burner and covered it up to keep warm while I baked some bread for dinner! I made these yummy garlic knots I found at the grocery store but next time I will make the 1 hour dinner rolls with a recipe I found!

Homemade Chocolate Frosting

One day I was baking a cake when I realized that I had no store bought frosting on hand! So after a quick scan in my cupboards I found powdered sugar and cocoa powder that I had bought for holiday baking. So  a quick search and I found a simple recipe for chocolate frosting!

Ingredients:

3 cups powdered sugar

3/4 cup unsweetened cocoa powder

1 stick unsalted butter

1/4 cup milk

1/4 teaspoon vanilla

Sift sugar and cocoa powder together in a bowl then in another bowl cream together the butter and vanilla. Add a cup of the cocoa sugar mix to the butter then add a bit of milk then more of the sugar coca mix. Keep mixing the sugar cocoa and milk until you get the desired consistency.

Then you use the frosting!! I spread mine over a sheet cake and it was delicious!!

Tips from me:

#1 I didn’t have a sifter to mix the sugar and cocoa powder so I added each to my food processor and pulsed it for a bit until it was blended!

#2 For thicker frosting use less milk and for thinner frosting, like a glaze, use more milk.

#3 Before you go and buy anything at the store look in your pantry! I am big on reusing items and I used up the rest of the cocoa powder and powdered sugar that I had purchased for Christmas cookies!

I liked how easy and delicious this frosting is! I have been using it ever since for all my cakes, brownies, and cupcakes! At first my daughter wasn’t sure if she wanted to try it. I realized then just how little I made basic items like frosting if her only exposure in 13 years is store bought! I informed her that before once upon a time people had to make their own cakes and frosting at home before mixes and store bought frosting was available. She then tried a slice of cake and declared it was the best frosting she’d ever had! Now I make it a point to make a lot of stuff without mixes so she can taste real home cooking!

Baked Spaghetti Squash

I love eating spaghetti squash with my pasta sauce so much now I doubt I will ever eat pasta again! But I have never cooked it myself….until now! The few times I have had it my mom has baked it and I have either #1 eaten it at her house or #2 taken some of her already cooked and frozen squash home with me. So while we were out at the local pumpkin patch I bought up both a nice spaghetti squash for about $1.50 each. Tonight I ate the last bit of the frozen squash I had left so I decided tonight I would cook the one I had at home.

To bake the squash you cut it in half lengthwise and clean out and dispose of the goopy guts! Then place the squash skin side up on an oiled cookie sheet. Some people use olive oil, salt, and pepper on the squash before baking it. However I just spray some Pam for baking on the cookie sheet and bake it like that,

Well the squash has a really thick skin and it was impossible for me to cut it so I asked my boyfriend to help me. By the time I got it in the oven it looked like this:

The poor thing was in about 5 pieces and, as you can see, I had about half a pumpkin to roast too.  So I put it in the oven on 350 degrees for an hour. You’ll know it’s ready when you can easily prick the flesh with a fork.

Once it’s cooked use a fork to scoop out the flesh, it will come out in strings hence the name spaghetti squash. After this you can use it for any recipe from spaghetti squash au gratin or put spaghetti sauce over it. It’s delicious!

Tips from me:

#1 After it cools down I intend to measure it out in 1/2 cup fulls, place in individual baggies, and then freeze it until I am ready to use it!

#2 Remember when roasting any squash the time may vary due to the size. Bigger, thicker ones take longer and the smaller ones will cook quicker.

Triple Chocolate Chip Cookies

Long time no post! Life has been very busy! Between healing my ankle, preparing my boyfriend’s surprise party, and a few other extracurricular activities I haven’t had much time for posting. Last weekend my mom and I made about 13 dozen cookies for her church’s weenie roast. I found this yummy recipe off Pinterest and made them along with the peanut butter, lemon, ginger snap, chocolate chip, snickerdoddles, and Neiman Marcus cookies.

Ingredients

2 1/4 cups flour

2/3 cup baking coca

1 tsp baking soda

1/4 tsp salt

1 cup butter/margarine

3/4 cups granulated sugar

2/3 cups brown sugar

1 tsp vanilla extract

2 large eggs

1 package of white chocolate chips

Heat oven to 350 degrees and then combine coca, flour, baking soda, and salt in a bowl. Then in another bowl beat butter, sugars, and vanilla until creamy. Then beat in eggs and after this combine in the dry mixture. After this add the chips.

Tips by me:

#1: These are just white chocolate chip cookies with chocolate batter to  make them triple chocolate I cut the white morsels down to 6 oz (Half a package) and added 6oz semi sweet chips for more chocolate!

#2 Eat one hot right out of the oven!! But you didn’t need to be told that did you??

Roasted Pumpkin Seeds

Yup this anohter pumpkin themed recipe! I love this time of the year because of all the yummy pumpkin themed food and drinks! While making the pumpkin puree (https://aradiasilvermoon.wordpress.com/2013/09/29/pumpkin-puree/) I put the seeds and strings in a bowl of water so I could roast them later. I didn’t even know you could do this until my boyfriend asked about it, apparently he love them! The same pin which inspired me to make my own pumpkin puree had instructions to roast the seeds.

It says to place the pumpkin innards in a bowl of water and then mush them until the seeds separate and float to the top.

Once you have the seeds floating on top of the water scoop them out and lay them out flat to dry them out.

I laid mine on a clean dish towel and let them sit out for a few hours to dry. Then you lay them in a single layer on a lightly oiled pan and season, I used sea salt, and toast at 325 for 10 to 15 minutes. Check them after 10 minutes and gently shake the pan once or twice and if needed toast them longer until lightly browned. After roasted transfer into a bowl to cool down then enjoy!

Tips from me: 

#1 Let them dry completely! When I roasted mine they were still “tacky” feeling and because of this they took extra long to roast.

#2 You can season them anyway you like! My boyfriend told me he likes them sweet so next time I will sprinkle with cinnamon and brown sugar. Also the pin states you can use cumin and chili powder or salt and pepper….whatever you want!

#3 Separating the seeds from the  strings can be challenging and you won’t get them all but your patience will be rewarded with yummy crunchy goodness!

I found these to be so yummy and even my uber-picky daughter loved them and stated they tasted like sunflower seeds! I am going back to get more pie pumpkin from the Amish market and will definitely make this again!

Homemade Pumpkin Puree

After making the steel cut pumpkin pie oats and the homemade pumpkin bread I had to break down and buy some more pumpkin so I could continue my cooking. But what I found shocked me! The canned pumpkin was $1.99 for generic and around $2.xx for name brand! I was astonished and decided I wouldn’t buy any! When I got home I looked on my pinterest and I found a how to on making your own pumpkin puree for use in recipes. I also like the idea of making my own because it won’t have any dyes, preservatives, or other artificial ingredients in it!

I went to a local grocery store and found they had pie pumpkins on sale for $0.89 and I bought two for under $3. The are a lot smaller then carving pumpkins, you should use pie pumpkin because they have a better taste to them. First you cut them in half legthwise (start at the stem and cut until you reach the stem again. After cutting it scoop out the seeds and put them aside (I am going to roast them for the first time tonight and post about it tomorrow) in a bowl of water.

Place both halve cut side down on a lightly oiled baking sheet and cook on 350 degrees the time ranges due to several factors. My tiny ones cooked up in 45 minutes but it can take up to 2 hours depending on size and density.

After they are cooked fully the flesh should scoop out easily, if not place back in over and cook longer. Wait until the pumpkin is cooled then scoop out the flesh and place into a bowl and toss the rinds in the trash, or compost. The pin said to mash it up but I had trouble and couldn’t mash it well enough so I dumped into a food processor until it was all smooth.

I baked two pumpkins and got around 3 cups of puree and since the bread calls for one and a half cups I measured out that amount. I put some into the fridge then froze the rest. I found nicer, darker pie pumpkins at a local market that sells Amish and Mennonite produce (they were $1.49 each) and I will bake them today but I don’t expect much change. I asked my mom about how pale the pureed pumpkin was compared to the canned pumpkin (she makes her own canned pumpkin) and she said the color didn’t matter. She said the products I made would be paler in comparison (to canned products) but taste the same since pumpkin has really no taste of it’s own…it’s the spices that make the taste. So don’t be frightened if your puree is pale too.  So for under $3 I got enough pumpkin for 2 loaves of bread compared to $2.xx for one can which would only make one loaf! It was super easy and unless I can find a crazy good deal on canned pumpkin I will make my own!

Food (and life) Saving Tips

Imagine you’re cooking your favorite meal and halfway through it you realize you don’t have the spices for it or another important ingredient. Nothing is more frustrating right? Well thanks to Pinterest I have found so many neat tricks that have saved me a lot of time, money, and most important frustration!

Seasonings

I was halfway through making tacos one night when I realized I didn’t have any taco seasoning packets! I was also broke so I couldn’t just run out and buy one! Thankfully I remembered I had pinned some seasoning blends so I went to my computer and found this lifesaver!

Taco Seasoning:
1 tbsp chili powder
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp crushed red pepper flakes
1/4 tsp dried oregano
1/2 tsp paprika
1 1/2 tsp ground cumin
1 tsp sea salt
1 tsp black pepper
mix and use! When I made this I omitted the red pepper flakes since I don’t like it to spicy. Also when using this put a little in at a time then taste it before adding more. I didn’t do this and my meat came out really spicy so I had to cut it down with water and more meat before we could eat it.
Pumpkin Pie Spice Blend:

I was making the pumpkin pie steel cut oats I realized that it called for pumpkin spice blend and I didn’t have any! S0 again I dug through my pins and found a great helping recipe.

1 tsp ground cinnamon

1/4 tsp ground nutmeg

1/4 tsp ground ginger

1/8 tsp ground cloves

mix together and use!

The best thing about these blends is the fact that they have no MSG, preservatives, or other additives! I like knowing what is in my food and I love how with a few simple spices you can save money by not buying packets at the store!

Freezing

Ever make something only to have a TON of it and no idea what to do with it all? I always freeze items for quick and tasty meals but I found some great tips that made this process a bit easier.

#1 Use a muffin tin!

(the pin http://highermiles.blogspot.com/2012/03/friday-food-oatmeal-from-freezer.html) After I made the pumpkin pie steel cut oats (post here https://aradiasilvermoon.wordpress.com/2013/09/19/pumpkin-pie-steel-cut-oats/) I took a 1/2 cup measuring cup and filled the muffin tin with the oatmeal then I put it in the freezer. After they froze I used a knife to gently loosen them so they popped out and I put them in the baggie to save for later!

You can also use your freezer to make yummy desserts!

Slice strawberries in half, place in an ice cube tray, pour melted chocolate over,and freeze! I would spray the tray with a bit of non stick spray so you can pop them all out then break apart!

Misc Tips: 

#1: Use your muffin tin to poach eggs!

Crack the eggs into a muffin tin and cook at 350 degrees for 10-15 minutes! You can then freeze them like this then heat up for breakfast or make sandwiches out of them and freeze those!

#2 Use 2 cookie sheets to make crispy, baked sandwiches!
